For the Fried Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix the Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Coat the Calamari
Dip each calamari ring into the wet mixture, allowing excess to drip off, then dredge in the dry mixture until fully coated. Set aside on a plate.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown.

Drain
Using a slotted spoon, remove the fried calamari and place them on a paper towel-lined plate to drain excess oil.

Add Tomatoes and Spices
Add the crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper. Stir to combine.

Simmer the Sauce
Bring the sauce to a simmer and let it cook for about 10-15 minutes, stirring occasionally.

Finish the Sauce
Remove from heat and stir in the chopped fresh basil. Adjust seasoning if necessary.
