French Onion Soup Recipe

Preparing the Soup Base

    Sauté the Onions

    In a large pot, melt the butter over medium heat. Add the sliced red and yellow onions. Cook, stirring frequently, for about 15-20 minutes until the onions are caramelized and golden brown.

    Add Garlic and Wine

    Minced the garlic and add it to the pot with the caramelized onions. Stir in the red wine and cook for an additional 5 minutes, allowing the alcohol to evaporate.

    Add Broth and Seasonings

    Pour in the vegetable broth, then add thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce heat to low and let simmer for about 30 minutes.

Preparing the Toppings

    Prepare the Baguette

    While the soup is simmering, preheat the oven to 350°F (175°C). Slice the French baguette into thick slices and place them on a baking sheet.

    Toast the Baguette

    Toast the sliced baguette in the preheated oven for about 10 minutes or until golden brown and slightly crispy.

    Assemble the Soup

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, place the toasted baguette slices on top, and generously sprinkle with Swiss cheese.

    Place the assembled bowls under the broiler for 2-3 minutes or until the cheese is bubbly and golden.
