Preparing the Chips

    Cutting the Potatoes

    Peel the russet potatoes and cut them into thick strips (about 1/2 inch wide). Place the cut potatoes in a bowl of cold water to soak for at least 30 minutes. This helps to remove excess starch.

    First Fry

    Heat 4 cups of vegetable oil in a deep fryer or a large pot over medium heat until it reaches 325°F (160°C). Drain the soaked potatoes and pat them dry with paper towels. Fry the potatoes in batches for about 5 minutes, or until they are pale and slightly softened. Remove them from the oil and drain on paper towels.

Preparing the Fish

    Making the Batter

    In a large bowl, mix together 1 cup of all-purpose flour, 1 tsp of baking powder, 1 tsp of salt, and 1 tsp of black pepper. Gradually whisk in 1 cup of cold beer (or sparkling water) until the batter is smooth and slightly thick.

    Coating the Fish

    Pat the fish fillets dry with paper towels. Dip each fillet into the batter, allowing excess batter to drip off.

Final Frying

    Frying the Fish

    Increase the temperature of the oil to 375°F (190°C). Carefully add the battered fish fillets to the hot oil, frying them in batches for 4-5 minutes, or until golden brown and crispy. Remove the fish from the oil and drain on paper towels.

    Finishing the Chips

    Once all the fish is cooked, increase the oil temperature back to 375°F (190°C). Fry the pre-cooked chips for an additional 3-4 minutes, or until they are golden and crispy. Drain on paper towels and season with salt to taste.

Serving

    Serve the hot fish and chips immediately, garnished with lemon wedges and tartar sauce if desired.
