Preparing the Shrimp

    Marinate the Shrimp

    In a bowl, season the peeled and deveined shrimp with salt and black pepper. Let it marinate for about 15 minutes.

    Prepare the Breading

    In a separate bowl, mix together the all-purpose flour and cornstarch. In another bowl, whisk the egg and water together until combined.

Frying the Shrimp

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Shrimp

    Dip each marinated shrimp first in the egg mixture, then dredge it in the flour-cornstarch mixture until fully coated.

    Fry the Shrimp

    Carefully place the coated shrimp in the hot oil, frying in batches to avoid overcrowding. Cook for about 2-3 minutes on each side or until golden brown and crispy.

    Drain the Shrimp

    Once cooked, remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil.

Making the Sauce

    Combine Sauce Ingredients

    In a mixing bowl, combine the sweet chili sauce, minced garlic, and lime juice. Mix well until all ingredients are incorporated.

    Toss the Shrimp

    In a large bowl, add the fried shrimp and pour the sweet chili sauce over them. Toss gently until all the shrimp are well coated.

    Garnish

    Sprinkle chopped green onions and sesame seeds over the shrimp for garnish, if using.
