Method

Crust Preparation

  1. 1

    Preheat the oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix crust ingredients

In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.

  3. 3

    Press the crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Ensure it is evenly distributed.

  4. 4

    Bake the crust

Bake the crust in the preheated oven for 10 minutes. Remove from oven and let cool while preparing the filling.

Filling Preparation

  1. 5

    Beat the cream cheese

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

  2. 6

    Add sugar

Gradually add the granulated sugar while continuing to beat the mixture until well combined.

  3. 7

    Incorporate sour cream and vanilla

Add the sour cream and vanilla extract to the mixture, and beat until smooth.

  4. 8

    Add eggs

Add the eggs, one at a time, mixing on low speed after each addition until just combined.

  5. 9

    Add flour

Sprinkle in the all-purpose flour and mix on low speed until just combined. Do not overmix.

  6. 10

    Pour filling into crust

Pour the cheesecake filling over the cooled graham cracker crust, smoothing the top with a spatula.

Baking

  1. 11

    Bake the cheesecake

Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly wobbly.

  2. 12

    Cool and chill

Turn off the oven, crack the door open, and let the cheesecake cool for 1 hour. Then refrigerate for at least 4 hours, preferably overnight.
