Calamari Preparation

Prepare the Calamari
Clean the calamari rings under cold water and pat them dry with paper towels.

Make the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Soak in Buttermilk
Place the cleaned calamari rings in a separate bowl and pour the buttermilk over them. Allow to soak for about 15 minutes.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 180°C (350°F).

Coat the Calamari
Remove the calamari from the buttermilk and let the excess drip off. Dredge each ring in the flour mixture, ensuring they are well coated.

Fry the Calamari
Carefully drop the coated calamari rings into the hot oil, working in batches to avoid overcrowding. Fry for 2-3 minutes until golden brown and crispy. Remove and drain on paper towels.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, salt, and black pepper. Bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Finish the Sauce
Stir in the chopped fresh basil just before serving.
