Method

Prepare the Filling

    Cook the Chorizo

    In a skillet over medium heat, add the chorizo sausage. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat.

    Mix the Filling

    In a large bowl, combine the cooked chorizo, shredded chicken, corn, black beans, cheddar cheese, diced green bell pepper, grated carrot, and chopped green onions. Mix well to combine all the ingredients.

Assemble the Egg Rolls

    Fill the Egg Roll Wrappers

    Lay one egg roll wrapper on a clean, dry surface, with one corner facing you. Place about 1/4 cup of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll it up tightly. Seal the top corner with a little water.

    Repeat for Remaining Wrappers

    Repeat the filling and rolling process for the remaining egg roll wrappers and filling.

Fry the Egg Rolls

    Heat the Oil

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Egg Rolls

    Carefully add the egg rolls in batches, ensuring not to overcrowd the pot. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Serve

    Serve the Aloha Egg Rolls hot with your favorite dipping sauce such as sweet chili sauce or salsa.
