Method

Preparation

  1. 1

    Chop Vegetables

Wash and chop bell peppers into strips, slice the red onion into thin wedges, and slice the zucchini into half-moons. Clean and slice the mushrooms.

  2. 2

    Mix Seasoning

In a large bowl, combine olive oil, lime juice, cumin, chili powder, garlic powder, salt, and black pepper. Whisk until well combined.

  3. 3

    Marinate Vegetables

Add the chopped vegetables to the seasoning mixture and toss until all vegetables are evenly coated. Let it marinate for at least 15 minutes.

Cooking

  1. 4

    Prepare Grill

Preheat your grill or grill pan over medium-high heat. If using mesquite wood, allow it to burn down until it’s glowing red with ash.

  2. 5

    Grill Vegetables

Place the marinated vegetables onto the grill. Cook for about 8-10 minutes, turning occasionally, until they are tender and slightly charred.

  3. 6

    Warm Tortillas

While the vegetables are grilling, warm the tortillas on the grill for about 1-2 minutes per side until they are soft and pliable.

Assembly

  1. 7

    Assemble Fajitas

Remove the grilled vegetables from the grill and place them on a serving platter. Serve with warmed tortillas and optional toppings like sour cream, guacamole, shredded cheese, and fresh cilantro.

  2. 8

    Serve

Enjoy the fajitas by filling the tortillas with grilled vegetables and your choice of toppings.
