Mix Seasoning
In a large bowl, combine olive oil, lime juice, cumin, chili powder, garlic powder, salt, and black pepper. Whisk until well combined.

Marinate Vegetables
Add the chopped vegetables to the seasoning mixture and toss until all vegetables are evenly coated. Let it marinate for at least 15 minutes.

Prepare Grill
Preheat your grill or grill pan over medium-high heat. If using mesquite wood, allow it to burn down until it’s glowing red with ash.

Place the marinated vegetables onto the grill. Cook for about 8-10 minutes, turning occasionally, until they are tender and slightly charred.

While the vegetables are grilling, warm the tortillas on the grill for about 1-2 minutes per side until they are soft and pliable.

Remove the grilled vegetables from the grill and place them on a serving platter. Serve with warmed tortillas and optional toppings like sour cream, guacamole, shredded cheese, and fresh cilantro.
