Method

Cooking the Tenderloin

    Prepare the Tenderloin

    Remove the tenderloin from the refrigerator and let it sit at room temperature for 30 minutes. Pat dry with paper towels.

    Season the Tenderloin

    Rub the tenderloin with olive oil, then season generously with salt, black pepper, garlic powder, and chopped rosemary.

    Cook the Tenderloin

    Preheat a grill or skillet over medium-high heat. Add the tenderloin and sear for 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from heat and let rest for 5 minutes before slicing.

Preparing the Side Salad

    Combine Salad Ingredients

    In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.

    In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to taste.

    Drizzle the dressing over the salad and toss gently to combine. Set aside.

Grilling Vegetables or Preparing Fries

    Prepare Grilled Vegetables

    In a bowl, toss bell peppers, zucchini, and red onion with olive oil, salt, and black pepper. Grill over medium heat for about 10-12 minutes, turning occasionally, until tender.

    Prepare House-Cut Fries

    Wash and cut potatoes into fries. Soak in cold water for 30 minutes, then drain and pat dry. Heat oil in a deep fryer or large pot and fry the potatoes until golden brown and crispy, about 5-7 minutes. Drain on paper towels and season with salt.
