Preparing the Shrimp

Coat the Shrimp
In a bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. In another bowl, beat the egg. Dip each shrimp in the egg, then in the flour mixture, ensuring they are well coated.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Shrimp
Carefully place the coated shrimp into the hot oil in batches. Fry for about 3-4 minutes or until golden brown and crispy. Remove the shrimp with a slotted spoon and drain on paper towels.
Making the Sweet and Sour Sauce

Mix the Sauce Ingredients
In a saucepan, combine ketchup, brown sugar, rice vinegar, soy sauce, minced garlic, and red chili flakes. Stir over medium heat until the sugar dissolves.

Thicken the Sauce
Add the cornstarch mixed with water to the sauce. Continue stirring until the sauce thickens to your desired consistency, about 2-3 minutes. Remove from heat.
Serving

Combine and Serve
Place the fried tiger shrimp on a serving plate and drizzle the sweet and sour sauce over them. Serve immediately while hot.
