Preparing the Taquitos

Prepare the Brisket
In a mixing bowl, combine the cooked brisket with salt, ground cumin, black pepper, garlic powder, and onion powder. Shred the brisket using two forks until it’s finely shredded and the spices are well mixed.

Assemble the Taquitos
Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable. Place about 2-3 tablespoons of the brisket mixture on one end of each tortilla, roll tightly, and secure with a toothpick if necessary.

Fry the Taquitos
In a large skillet, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully add the taquitos, seam side down. Fry until golden and crispy, about 3-4 minutes on each side. Remove from the skillet and drain on paper towels.
Making the White Queso

Melt the Cheese
In a saucepan over medium heat, combine the white cheddar cheese, Monterey Jack cheese, milk, and cream cheese. Stir continuously until melted and creamy.

Add Flavor
Add the diced jalapeños and minced garlic to the cheese mixture. Stir well and cook for an additional 2-3 minutes until heated through.
