Method

Pork Preparation

  1. 1

    Prepare the Pork

In a slow cooker, place the pork shoulder. Add minced garlic, cumin, oregano, salt, black pepper, orange juice, lime juice, and bay leaves. Stir to combine.

  2. 2

    Cook the Pork

Cover and cook on low for 8-10 hours, or until the pork is tender and easily shreds with a fork.

  3. 3

    Shred the Pork

Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard any excess fat and bay leaves.

Onion Preparation

  1. 4

    Sauté the Onions

In a skillet, heat olive oil over medium heat. Add the sliced onion and salt. Sauté for about 5-7 minutes until the onions are soft and slightly caramelized.

Tomatillo Sauce Preparation

  1. 5

    Prepare the Tomatillo Sauce

In a blender, combine tomatillos, jalapeños, garlic, cilantro, and lime juice. Blend until smooth. Adjust seasoning as needed.

Pico de Gallo Preparation

  1. 6

    Make the Pico de Gallo

In a bowl, combine diced tomatoes, diced onion, chopped cilantro, lime juice, and salt. Mix well and let it sit for at least 15 minutes for flavors to meld.

Serving

  1. 7

    Assemble the Tacos

Serve the shredded pork on tortillas, top with sautéed onions, tomatillo sauce, and pico de gallo.
