Pork Preparation

Prepare the Pork
In a slow cooker, place the pork shoulder. Add minced garlic, cumin, oregano, salt, black pepper, orange juice, lime juice, and bay leaves. Stir to combine.

Cook the Pork
Cover and cook on low for 8-10 hours, or until the pork is tender and easily shreds with a fork.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard any excess fat and bay leaves.

Make the Pico de Gallo
In a bowl, combine diced tomatoes, diced onion, chopped cilantro, lime juice, and salt. Mix well and let it sit for at least 15 minutes for flavors to meld.

Assemble the Tacos
Serve the shredded pork on tortillas, top with sautéed onions, tomatillo sauce, and pico de gallo.
