Preparation

    Prepare the Seafood

    In a medium bowl, combine the Gulf shrimp or crawfish tails with Cajun seasoning, salt, and black pepper. Mix well and set aside to marinate for about 10 minutes.

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic, diced red bell pepper, and chopped green onions. Sauté for about 5 minutes or until the vegetables are tender.

    Cook the Seafood

    Add the marinated shrimp or crawfish to the skillet with the vegetables. Cook for an additional 5-7 minutes, or until the seafood is cooked through and opaque. Remove from heat and allow to cool slightly.

    Prepare the Cheese Mixture

    In a separate bowl, combine the shredded Monterey Jack cheese and softened cream cheese. Mix until well combined.

Assembly and Cooking

    Assemble the Quesadillas

    Take one flour tortilla and spread a layer of the cheese mixture on half of the tortilla. Top with a portion of the seafood and vegetable mixture. Fold the tortilla in half over the filling.

    Cook the Quesadillas

    In the same skillet, heat the remaining olive oil over medium heat. Place the stuffed tortillas in the skillet and cook for 3-4 minutes on each side or until golden brown and crispy.

    Slice and Serve

    Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Slice into wedges and serve warm with your favorite dipping sauce.
