Chicken Quesadillas

    Prepare the Filling

    In a bowl, combine shredded cooked chicken and shredded cheddar cheese. Mix until well combined.

    Assemble Quesadillas

    Place a tortilla on a flat surface, add a portion of the chicken and cheese mixture on one half, then fold the tortilla in half.

    Cook Quesadillas

    In a skillet over medium heat, add olive oil. Once heated, add the folded quesadilla and cook for 3-4 minutes on each side until golden brown and cheese is melted.

    Serve

    Cut into wedges and serve with sour cream and salsa.

Beef Fajita Nachos

    Cook the Ground Beef

    In a skillet over medium heat, brown the ground beef until cooked through. Drain excess fat.

    Add Vegetables

    Add sliced bell peppers and onion to the skillet with the beef. Cook for an additional 5 minutes until the vegetables are tender.

    Assemble Nachos

    On a large baking sheet, spread out the tortilla chips. Top with the beef and vegetable mixture, then sprinkle shredded Monterey Jack cheese and jalapeños on top.

    Preheat the oven to 350°F (175°C). Bake nachos for about 10 minutes or until the cheese is melted.

    Remove from the oven and serve immediately with guacamole.

Ground Beef Taquitos

    Cook the Ground Beef

    In a skillet over medium heat, cook the ground beef until fully cooked, breaking it apart with a spoon.

    Add cumin and chili powder to the beef. Stir well and cook for an additional 2 minutes.

    Assemble Taquitos

    Place a small amount of the beef mixture and a sprinkle of cheddar cheese on each corn tortilla. Roll tightly.

    Fry the Taquitos

    In a deep skillet or fryer, heat vegetable oil over medium-high heat. Fry the taquitos in batches until golden brown and crispy, about 3-4 minutes.
