Prepare the Ingredients
Gather all the ingredients mentioned in the sections. If using meat, ensure it's cooked and shredded or sliced into bite-sized pieces.

Sauté Spinach
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the spinach and sauté until wilted, about 2-3 minutes. Set aside.
Cooking the Quesadillas

Heat the Skillet
In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high heat.

Assemble the Quesadillas
Place one tortilla in the skillet. On one half of the tortilla, layer 1/2 cup of shredded cheese, followed by your choice of protein (grilled chicken, brisket, pork, or beef fajita), sautéed spinach, and another 1/2 cup of cheese. Fold the tortilla over to cover the filling.

Cook the Quesadilla
Cook for about 3-4 minutes on one side until golden brown and the cheese starts to melt. Carefully flip the quesadilla and cook for another 3-4 minutes on the other side.

Repeat the process for the remaining tortillas and filling.

Cut the quesadillas into wedges and serve hot with sour cream, guacamole, and salsa on the side.
