Enchiladas

Prepare the Enchiladas
Preheat your oven to 375°F (190°C). In a baking dish, spread a thin layer of red enchilada sauce. Take a corn tortilla, fill it with shredded chicken and a sprinkle of cheese, roll it up, and place it seam-side down in the dish. Repeat with remaining tortillas.

Add Sauce and Cheese
Once all tortillas are arranged in the baking dish, drizzle the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

Bake
Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until cheese is bubbly.

Serve with Sour Cream
Remove from oven, allow cooling for a few minutes, and serve with a dollop of sour cream on top.
Beef Tacos

Cook the Beef
In a skillet over medium heat, add ground beef. Cook until browned, breaking it up with a spatula. Drain excess fat.

Add Seasoning
Add taco seasoning and a splash of water. Stir well and let it simmer for about 5 minutes.

Prepare Taco Shells
While the beef is cooking, warm the taco shells in the oven according to package instructions.

Assemble Tacos
Fill each taco shell with the beef mixture, then top with shredded lettuce, diced tomatoes, cheddar cheese, and salsa.
