    Prepare the Enchiladas

    Preheat your oven to 375°F (190°C). In a baking dish, spread a thin layer of red enchilada sauce. Take a corn tortilla, fill it with shredded chicken and a sprinkle of cheese, roll it up, and place it seam-side down in the dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Once all tortillas are arranged in the baking dish, drizzle the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

    Bake

    Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until cheese is bubbly.

    Serve with Sour Cream

    Remove from oven, allow cooling for a few minutes, and serve with a dollop of sour cream on top.

Beef Tacos

    Cook the Beef

    In a skillet over medium heat, add ground beef. Cook until browned, breaking it up with a spatula. Drain excess fat.

    Add Seasoning

    Add taco seasoning and a splash of water. Stir well and let it simmer for about 5 minutes.

    Prepare Taco Shells

    While the beef is cooking, warm the taco shells in the oven according to package instructions.

    Assemble Tacos

    Fill each taco shell with the beef mixture, then top with shredded lettuce, diced tomatoes, cheddar cheese, and salsa.

Rice and Beans

    Cook the Rice

    In a medium saucepan, combine white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes or until rice is tender and water is absorbed. Fluff with a fork.

    Prepare the Beans

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

    Combine Beans

    Add drained black beans to the skillet. Stir to combine and cook for about 5 minutes until heated through. Season with salt.

    Finish with Cilantro

    Remove from heat and stir in chopped cilantro. Serve alongside the rice.
