Preparation

    Prepare the Marinade

    In a bowl, combine olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper to create a marinade.

    Marinate the Meats

    Place the beef and chicken fajitas in a resealable plastic bag or a shallow dish. Pour half of the marinade over the meat, seal the bag or cover the dish, and refrigerate for at least 30 minutes.

    Prepare the Shrimp

    In a separate bowl, coat the jumbo shrimp and shrimp brochetas with the remaining marinade. Set aside.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Cook the Beef and Chicken

    Remove the beef and chicken from the marinade and grill on medium-high heat for about 5-7 minutes on each side, or until cooked through and nice grill marks appear.

    Grill the Jumbo Shrimp

    Place the jumbo shrimp on the grill and cook for about 3-4 minutes on each side, until they turn pink and opaque.

    Grill the Shrimp Brochetas

    Grill the shrimp brochetas for about 2-3 minutes on each side until fully cooked.

    Cook the Ribs

    If the baby back ribs are pre-cooked, place them on the grill for about 10-15 minutes, turning occasionally, to heat through and caramelize the sauce. If they are raw, grill for 25-30 minutes, basting with your favorite BBQ sauce.

Serving

    Prepare the Tortillas and Accompaniments

    Warm the corn tortillas on the grill for about 1 minute on each side. Prepare pico de gallo, guacamole, and sour cream for serving.

    Plate the Parrillada

    On a large serving platter, arrange the grilled beef, chicken, shrimp, shrimp brochetas, and ribs. Serve with warm corn tortillas, pico de gallo, guacamole, and sour cream on the side.
