Tacos Preparation

    Prepare the Protein

    In a bowl, combine the mesquite tilapia or shrimp with olive oil, lime juice, ground cumin, chili powder, garlic powder, salt, and black pepper. Mix well to coat evenly.

    Grill the Protein

    Heat a grill or grill pan over medium-high heat. Cook the marinated tilapia or shrimp for about 3-4 minutes per side, or until cooked through and slightly charred. Remove from heat and let it rest.

    Assemble the Tacos

    Warm the white corn tortillas on a skillet for about 30 seconds on each side. Place the grilled tilapia or shrimp on each tortilla, and top with shredded lettuce, red cabbage, and diced tomatoes.

Chicken Soup Preparation

    Sauté Vegetables

    In a large pot, heat a tablespoon of olive oil over medium heat. Add diced onion, carrots, celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.

    Add Broth and Chicken

    Pour in the chicken broth and bring to a boil. Add the shredded chicken, salt, and black pepper. Reduce the heat and let it simmer for about 15 minutes.

    Finish the Soup

    Stir in the chopped cilantro just before serving. Adjust seasoning with additional salt and pepper if needed.

Rice Preparation

    Cook the Rice

    In a saucepan, combine the white rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is tender and water is absorbed.

    Fluff the Rice

    Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
