Prepare the Jalapenos
Wash the jalapeno peppers thoroughly. Cut off the tops and slice them in half lengthwise. Remove the seeds and membranes using a small spoon or knife to reduce the heat level. Set aside.

Make the Cheese Filling
In a mixing bowl, combine the shredded Jack cheese, shredded Cheddar cheese, and Ranch dressing. Mix well until all ingredients are evenly combined.
Stuffing and Breading

Stuff the Jalapenos
Take the cheese filling and generously stuff each jalapeno half with the mixture. Press down gently to ensure the filling is compact and will stay in the peppers.

Prepare for Breading
Set up a breading station. Place the all-purpose flour in one shallow dish, beat the eggs in another shallow dish, and place the breadcrumbs in a third shallow dish.

Bread the Stuffed Jalapenos
Take each stuffed jalapeno, coat it in flour, then dip it in the beaten eggs, and finally roll it in the breadcrumbs until fully coated. Repeat with all stuffed jalapenos.
Frying

Heat the Oil
In a large pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread into the oil; if it bubbles and browns, it's ready.

Fry the Jalapenos
Carefully add the breaded jalapenos to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown and crispy.

Drain and Serve
Once fried, use a slotted spoon to remove the jalapenos from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with extra Ranch dressing on the side for dipping.
