Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tsp of baking powder, and 1 tsp of salt. Whisk together until evenly mixed.

    Incorporate Lard

    Add 2 tablespoons of lard or shortening to the dry ingredients. Use your fingers to rub the lard into the flour mixture until it resembles coarse crumbs.

    Add Water

    Gradually add 3 tablespoons of warm water to the mixture, stirring until the dough comes together. Knead the dough in the bowl or on a lightly floured surface for about 2-3 minutes until smooth.

    Rest the Dough

    Cover the dough with a clean kitchen towel and let it rest for about 20-30 minutes.

Frying

    Heat Oil

    In a large, deep frying pan, pour in 2 cups of vegetable oil. Heat the oil over medium heat until it reaches 350°F (175°C).

    Roll Out the Dough

    On a floured surface, roll out the rested dough to about 1/8 inch thickness. Cut the dough into squares or triangles.

    Fry the Sopapillas

    Once the oil is hot, carefully drop the cut dough pieces into the oil. Fry them for about 2-3 minutes on each side, or until they puff up and turn golden brown.

    Drain and Dust

    Using a slotted spoon, remove the fried sopapillas from the oil and place them on a paper towel-lined plate to drain excess oil. While still warm, dust them with cinnamon sugar.
