Taco Salad

    Prepare the Meat

    In a large skillet, cook the ground beef or chicken over medium heat until browned. Drain any excess fat.

    Add Seasoning

    Stir in the taco seasoning and follow the package instructions, usually adding a bit of water to help it blend. Cook for an additional 5 minutes until the meat is well-seasoned.

    Assemble the Salad

    In a large bowl, layer the shredded lettuce, tomatoes, seasoned meat, cheddar cheese, and black olives.

    Serve

    Top with a dollop of sour cream and serve with tortilla chips on the side.

    Sauté Aromatics

    In a large pot, heat a little oil over medium heat. Add chopped onion and minced garlic. Sauté until onion is translucent, about 3-4 minutes.

    Add Beans and Broth

    Add the black beans (if using canned, rinse them first) and broth to the pot. Bring to a simmer.

    Season the Soup

    Stir in cumin, salt, and pepper. Let the soup simmer for 15-20 minutes, allowing the flavors to meld.

    Add Chicken (if making chicken soup)

    If using chicken, add the cooked, shredded chicken to the soup during the last 5 minutes of cooking.

    Ladle the soup into bowls, garnish with chopped cilantro, and serve hot.
