Prepare the Taco Shells

Heat Oil
In a deep skillet, heat the vegetable oil over medium-high heat until it shimmers.

Fry Tortillas
Carefully place each corn tortilla into the hot oil one at a time. Fry for about 30 seconds on each side until they are crispy and golden brown. Remove from the oil and drain on paper towels.
Cook the Filling

Sauté Onion and Garlic
In a large skillet over medium heat, add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

Brown the Meat
Add the ground beef or chicken to the skillet. Cook until browned and fully cooked through, breaking it up with a spatula, about 5-7 minutes.

Season the Filling
Stir in the taco seasoning, salt, and black pepper. Mix thoroughly and cook for an additional 2-3 minutes until the spices are well incorporated.
Assemble the Tacos

Take each crispy taco shell and fill it with the cooked beef or chicken filling.

Top each taco with shredded lettuce, diced tomato, shredded cheddar cheese, a dollop of sour cream, and a spoonful of salsa.
