Method
Burrito Filling
- 1
Cook the Meat
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent (about 3-4 minutes).
- 2
Add the Meat
Add the ground beef or chicken to the skillet. Cook until browned and fully cooked, breaking it up with a spatula as it cooks (about 5-7 minutes).
- 3
Season the Meat
Stir in the taco seasoning and cook for an additional 2 minutes, allowing the flavors to meld.
Rice and Beans
- 4
Cook the Rice
In a medium saucepan, bring the water to a boil. Stir in the long grain white rice and a pinch of salt. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and water is absorbed.
- 5
Prepare the Beans
While the rice is cooking, heat the canned black beans in a small saucepan over medium heat. Stir in cumin and salt, cooking until heated through (about 5 minutes).
Burrito Assembly
- 6
Warm the Tortillas
If desired, warm the flour tortillas in a dry skillet over medium heat for 30 seconds on each side until soft and pliable.
- 7
Assemble the Burrito
On each tortilla, layer the cooked meat, rice, beans, shredded cheese, sour cream, salsa, and fresh cilantro. Be careful not to overfill.
- 8
Wrap the Burrito
Fold the sides of the tortilla inwards and then roll from the bottom up to enclose the filling. Repeat with the remaining tortillas.
- 9
Serve
Cut each burrito in half and serve with additional salsa and sour cream on the side.
