Method

Marinating the Meat

  1. 1

    Prepare the Marinade

In a bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Mix well.

  2. 2

Marinate the Skirt Steak and Shrimp

Place the skirt steak and shrimp in a resealable plastic bag or dish. Pour the marinade over the meat and seafood, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Grilling

  1. 3

    Prepare the Grill

Preheat your grill to high heat, ideally using mesquite wood chips for smoking to infuse a rich flavor.

  2. 4

    Grill the Skirt Steak

Remove the skirt steak from the marinade and let any excess drip off. Grill for about 4-5 minutes per side, or until it reaches your desired level of doneness. Let the steak rest for 5 minutes before slicing it against the grain into strips.

  3. 5

    Grill the Shrimp

Thread the marinated shrimp onto skewers. Grill for about 2-3 minutes per side until they are opaque and cooked through.

Cooking the Vegetables

  1. 6

Sauté the Bell Peppers and Onion

In a skillet, heat a drizzle of olive oil over medium heat. Add the sliced bell peppers, onion, and minced garlic. Sauté for about 5-7 minutes until they are tender and slightly caramelized.

Serving

  1. 7

    Assemble the Fajitas

Serve the grilled skirt steak and shrimp on a platter with sautéed vegetables. Offer fresh cilantro, sour cream, guacamole, and tortillas on the side for guests to assemble their own fajitas.
