Method

Preparation of Marinade

  1. 1

    Prepare the Marinade

In a bowl, combine olive oil, lime juice, minced garlic, cumin powder, chili powder, salt, and black pepper. Whisk until well blended.

Marinating the Steak and Shrimp

  1. 2

    Marinate the Skirt Steak

Place the skirt steak in a shallow dish or a resealable plastic bag. Pour half of the marinade over the steak, ensuring it is well coated. Cover the dish or seal the bag and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

  2. 3

    Marinate the Jumbo Shrimp

In a separate bowl, add the jumbo shrimp and the remaining marinade. Toss to coat the shrimp evenly. Cover and refrigerate for the same duration as the steak.

Cooking

  1. 4

    Grill the Skirt Steak

Preheat your grill to medium-high heat. Remove the skirt steak from the marinade and let any excess drip off. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from grill and let rest for 5 minutes.

  2. 5

    Grill the Jumbo Shrimp

While the steak is resting, place the marinated jumbo shrimp on the grill. Cook for 2-3 minutes on each side, or until they are opaque and cooked through. Remove from grill.

Serving

  1. 6

    Plate the Dish

Slice the skirt steak against the grain into thin strips. Arrange the steak slices on a plate with the grilled jumbo shrimp. Garnish with chopped cilantro and serve with lime wedges on the side.
