Preparation

    Prepare the Vegetables

    Slice the bell peppers and onion into thin strips. Mince the garlic cloves.

    Marinate the Ribeye

    In a bowl, combine the olive oil, fajita seasoning, minced garlic, and juice of the lime. Add the ribeye steak to the marinade, ensuring it's fully coated. Let it marinate for at least 30 minutes at room temperature.

Cooking

    Grill the Ribeye

    Preheat a mesquite grill over medium-high heat. Remove the ribeye from the marinade and place it on the grill. Cook for about 5-7 minutes on each side for medium-rare, adjusting time for desired doneness.

    Sauté the Vegetables

    In a skillet over medium heat, add a little olive oil. Once hot, add the sliced bell peppers and onion. Sauté for about 5-7 minutes until they are tender and slightly charred. Season with salt and pepper to taste.

    Warm the Tortillas

    Wrap the tortillas in aluminum foil and place them on the grill for the last few minutes while the steak cooks to warm them up.

    Slice and Serve

    Once the ribeye is cooked to your preference, remove it from the grill and let it rest for about 5 minutes. Slice it against the grain into thin strips. Serve the steak slices on warm tortillas topped with sautéed vegetables and optional toppings like sour cream, guacamole, shredded cheese, and salsa.
