Fajita Chicken or Beef

Method

Prepare Queso Flameado

    Cook Chorizo

    In a skillet over medium heat, add the olive oil and cook the chorizo until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

    Sauté Vegetables

    In the same skillet, add chopped red bell pepper, onion, and jalapeño pepper. Sauté until softened, about 3-4 minutes.

    Combine Cheeses

    In a medium bowl, combine Chihuahua cheese and Monterey Jack cheese. Mix in the sautéed vegetables and cooked chorizo.

    Melt Cheese

    Transfer the cheese mixture to a baking dish and broil in the oven until melted and bubbly, approximately 5-7 minutes.

    Garnish

    Once melted, remove from the oven and garnish with fresh cilantro. Serve immediately with tortilla chips.

Prepare Fajita Chicken or Beef

    Marinate Protein

    If using chicken, slice the chicken breast into strips. For beef, slice the flank steak against the grain. In a bowl, combine the protein with fajita seasoning, lime juice, salt, and black pepper. Let marinate for at least 15 minutes.

    Cook Fajitas

    In a skillet over medium-high heat, add a little olive oil and cook the marinated chicken or beef until fully cooked and browned, about 6-8 minutes for chicken and 4-6 minutes for beef.

    Serve

    Once cooked, serve alongside the Queso Flameado as a topping or on the side.
