Pulled Pork Preparation

Prepare the Pork
Trim excess fat from the pork shoulder. Cut it into large chunks.

Season the Meat
In a bowl, combine cumin, oregano, chili powder, salt, and black pepper. Rub the spice mixture all over the pork pieces.

Sear the Pork
In a large skillet, heat olive oil over medium-high heat. Sear the pork chunks on all sides until browned, about 5-7 minutes.

Cook the Pork
Place seared pork in a slow cooker. Add chopped onions, minced garlic, orange juice, and lime juice. Cover and cook on low for 8 hours or high for 4 hours until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix it with the juices.

Prepare the Tortillas
Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until soft.

Assemble the Tacos
Place a generous portion of pulled pork on each tortilla. Top with grilled onions, tomatillo salsa, pico de gallo, and cilantro.

Serve
Serve the tacos with lime wedges on the side for squeezing over the top.
