Preparation of Pescado

Marinate the Fish
In a bowl, mix olive oil, lime juice, garlic powder, chili powder, cumin, salt, and black pepper. Add the tilapia fillets and coat well. Let marinate for at least 30 minutes.

Prepare the Grill
Soak the mesquite wood chips in water for at least 30 minutes. Preheat your grill to medium-high heat.

Grill the Fish
Place the soaked wood chips in a smoker box or wrap them in foil, then place on the grill. Grill the marinated tilapia for about 4-5 minutes on each side or until cooked through.

Cook the Rice
Add the rice to the saucepan and stir for about 2 minutes. Then add chicken broth, tomato sauce, cumin, salt, and black pepper. Bring to a boil.

Simmer the Rice
Reduce heat to low, cover the saucepan, and let simmer for 20 minutes or until rice is cooked and liquid is absorbed.

Add lime juice, diced tomato, chopped red onion, chopped cilantro, and salt. Mix gently until combined.

Taste the guacamole and adjust seasoning as needed with more salt or lime juice.
