    Marinate the Chicken

    In a large bowl, combine olive oil, salt, and black pepper. Add the chicken breasts, ensuring they are well coated. Cover and marinate for at least 30 minutes.

    Prepare the Vegetables

    Chop the bell peppers, zucchini, and red onion into bite-sized pieces. Set aside.

    Make Garlic Butter

    In a small saucepan over low heat, melt the unsalted butter. Add minced garlic and cook until fragrant, about 2 minutes. Remove from heat and stir in chopped parsley and lemon juice.

Grilling

    Prepare the Grill

    Soak mesquite wood chips in water for at least 30 minutes. Preheat your grill to medium-high heat and add the soaked wood chips to the grill box or in a smoker pouch.

    Grill the Chicken

    Place the marinated chicken breasts on the grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).

    Grill the Vegetables

    In the last 10 minutes of grilling the chicken, add the chopped vegetables to the grill. Cook until tender and slightly charred, about 8-10 minutes.

Serving

    Plate and Serve

    Once the chicken and vegetables are done, remove them from the grill. Drizzle the garlic butter over the chicken and vegetables before serving. Enjoy your mesquite grilled pechuga!
