Prepare the Burger Patties

Make the Patties
In a large bowl, mix the ground beef with salt and black pepper. Form the mixture into two equal patties, pressing them slightly in the center to prevent bulging during cooking.

Soak Wood Chips
Soak the mesquite wood chips in water for at least 30 minutes before grilling to ensure they smoke properly.
Grill the Burger

Slice the Vegetables
While the patties are grilling, slice the tomato and onion into thin rounds, and wash the lettuce leaves.
Make the Fries or Onion Rings

Cut the Potatoes
Cut the potatoes into fries or rings, depending on your preference.

Heat the Oil
In a large pot or deep fryer, heat the oil to 350°F (175°C).

Fry the Potatoes
Once the oil is hot, fry the potatoes in batches until golden brown and crispy, about 3-5 minutes. Remove and drain on paper towels.
Assemble the Burger

Build the Burger
Spread mayonnaise and mustard on the bottom bun. Add the grilled patty, then layer with lettuce, tomato, onion, and pickles. Top with the other half of the bun.
