Marinade Preparation

Prepare Marinade
In a mixing bowl, combine olive oil, lime juice, minced garlic, ground cumin, smoked paprika, salt, black pepper, and honey. Whisk until well combined.

Marinate Chicken and Shrimp
Place the chicken breasts and shrimp in a large ziplock bag or a bowl. Pour the marinade over the chicken and shrimp, ensuring they are well coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Soak Mesquite Chips
Soak the mesquite wood chips in water for at least 30 minutes before grilling to prevent them from burning too quickly.

Preheat Grill
Preheat your grill to medium-high heat. If using charcoal, make sure the coals are glowing and covered with ash.

Grill Chicken
Remove the chicken from the marinade and let the excess drip off. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Grill Shrimp
Thread the shrimp onto skewers for easy grilling. Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque.

Add Mesquite Flavor
During the last few minutes of grilling, add the soaked mesquite wood chips to the fire for an enhanced smoky flavor.

Once the chicken and shrimp are cooked, remove them from the grill and let them rest for a few minutes.

Serve the grilled mesquite chicken and shrimp on a platter. Garnish with chopped fresh cilantro and lime wedges on the side.
