Marinate the Meats
In a bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Add skirt steak and chicken breast, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight.

Grill the Meats
Preheat the grill to medium-high heat. Remove the meats from the marinade and discard the marinade. Grill the skirt steak for about 4-5 minutes per side and the chicken breast for about 6-7 minutes per side, or until cooked through. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (75°C).

Cook the Vegetables
While the meats are grilling, in a large skillet over medium heat, add a tablespoon of olive oil. Sauté the sliced bell peppers and onion until they are tender and slightly caramelized, about 6-8 minutes.

Slice and Serve
Once the meats are cooked, let them rest for a few minutes before slicing them into thin strips. Serve the sliced meats on a platter with the sautéed vegetables. Offer warm flour tortillas, sour cream, guacamole, and salsa on the side for guests to assemble their fajitas.
