Protein Preparation

    Cook the Chicken or Brisket

    Season the chicken or brisket with salt and pepper. Grill or pan-sear over medium heat until fully cooked, about 6-7 minutes per side for chicken or 10-12 minutes per side for brisket. Ensure the internal temperature reaches 165°F for chicken and 190°F for brisket. If using shrimp or fajita beef, cook in a similar manner until fully cooked.

    Prepare the Rice or French Fries

    If using rice, cook according to package instructions until fluffy. If using french fries, prepare according to package instructions (bake or fry) until crispy and golden brown.

Queso Preparation

    Make the Queso

    In a saucepan over medium heat, combine white queso cheese, milk, cream cheese, green chilies, garlic powder, salt, and pepper. Stir continuously until melted and smooth. If the mixture is too thick, add more milk to reach desired consistency.

Assembly

    Assemble the Happy Plate

    On a plate, place a generous serving of cooked rice or french fries as the base. Top with sliced chicken or brisket, then drizzle with the warm white queso. Garnish with chopped cilantro and serve with lime wedges on the side.
