Prepare Beef Medallions

    Marinate the Beef

    In a small bowl, mix olive oil, garlic powder, salt, black pepper, and chopped fresh rosemary. Rub the mixture over the beef tenderloin and let it marinate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Beef

    Once the grill is hot, place the marinated beef medallions on the grill. Cook for about 5-7 minutes on each side for medium-rare, or longer to your desired doneness.

    Rest the Beef

    Remove the medallions from the grill and let them rest for 5 minutes before slicing.

Prepare Cheese Enchiladas

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Assemble Enchiladas

    Spread a thin layer of enchilada sauce on the bottom of a baking dish. Take a corn tortilla, fill it with 1/4 cup of shredded cheese, and roll it up. Place it seam-side down in the baking dish. Repeat with the remaining tortillas.

    Add Sauce and Cheese

    Pour the remaining enchilada sauce over the rolled tortillas. Sprinkle the remaining shredded cheese on top.

    Bake Enchiladas

    Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.

Serve

    Plate the Dish

    On a serving plate, stack a few enchiladas and slice the grilled beef medallions. Place the sliced beef on top of the enchiladas.

    Garnish

    Top with chopped green onions and fresh cilantro. Serve with lime wedges and a side of sour cream.
