Preparing the Rice

Rinse and Cook Rice
Rinse 1 cup of white rice under cold running water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Sauté Vegetables
While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the broccoli florets, sliced carrots, and bell peppers. Sauté for 5-7 minutes, until the vegetables are tender but still crisp. Season with salt and black pepper to taste.
Cooking the Fish

Cook Salmon or Tuna
Pat the salmon or tuna fillet dry with paper towels. Rub with the remaining tablespoon of olive oil, lemon juice, garlic powder, salt, and black pepper. Heat a non-stick skillet over medium-high heat. Cook the fish for 4-5 minutes on each side for salmon, or 2-3 minutes per side for tuna (for medium-rare), until the fish is cooked through and flakes easily with a fork.
Preparing the Soup

Heat the Broth
In a separate pot, heat 2 cups of vegetable or chicken broth over medium heat until it reaches a simmer. Season with salt and pepper if desired.
Serving

Plate the Dish
On a plate, serve a portion of the cooked rice, topped with sautéed vegetables and the cooked fish. Ladle the hot broth into a bowl to serve alongside.
