Assemble the Enchiladas
Preheat the oven to 350°F (175°C). In a baking dish, spread a thin layer of enchilada sauce on the bottom. Take a corn tortilla, fill it with a mix of cheddar cheese, Monterey Jack cheese, diced green chilies, and a dollop of sour cream. Roll the tortilla and place it seam-side down in the baking dish.

Add Sauce and Cheese
Once all tortillas are in the baking dish, pour the remaining enchilada sauce over the top and sprinkle the rest of the cheeses on top.

Plate the Dish
Slice the grilled skirt steak against the grain into strips. Serve alongside the queso enchiladas, garnished with fresh cilantro, lime wedges, and additional sour cream if desired.
