Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Filling
In a large bowl, combine the shredded cooked chicken or cooked ground beef with 1 cup of shredded cheddar cheese. Mix well to combine.

Soften the Tortillas
In a skillet, heat a small amount of oil over medium heat. Lightly fry each corn tortilla for about 10-15 seconds per side to soften them. Drain on paper towels.

Fill the Tortillas
Take each softened tortilla and place about 2-3 tablespoons of the protein and cheese mixture in the center. Roll the tortilla tightly around the filling.

Arrange in Baking Dish
Place the rolled tortillas seam-side down in a greased 9x13 inch baking dish.

Add Sauce and Cheese
Pour the enchilada sauce evenly over the rolled tortillas, then sprinkle the remaining 1 cup of shredded cheddar cheese on top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Once done, remove from the oven and let cool for a few minutes. Top with sour cream and chopped cilantro before serving.
