Enchiladas

    Prepare the beef filling

    In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic; sauté until the onion becomes translucent.

    Cook the beef

    Add the ground beef to the skillet. Sprinkle fajita seasoning, salt, and black pepper. Cook until the beef is browned and cooked through, about 8-10 minutes.

    Assemble the enchiladas

    Preheat the oven to 375°F (190°C). In a large baking dish, spread a layer of enchilada sauce at the bottom. Take a flour tortilla, fill it with some beef mixture and shredded cheese, then roll it up and place it seam side down in the dish. Repeat with remaining tortillas.

    Top with sauce and cheese

    Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

    Bake

    Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.

Mexican Rice

    Sauté the aromatics

    In a saucepan, heat olive oil over medium heat. Add the finely chopped onion and minced garlic, and sauté until fragrant and translucent.

    Cook the rice

    Add the long-grain rice to the saucepan and stir for 2-3 minutes. Pour in the tomato sauce and chicken broth, adding cumin and salt. Bring to a boil.

    Simmer

    Reduce the heat to low, cover, and let the rice simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.

    Prepare the beans

    In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft.

    Mash the beans

    Add the canned pinto beans (drained) to the skillet. Mash the beans with a fork or potato masher, mixing well with the onion and garlic. Season with salt.

    Cook through

    Cook for about 5-7 minutes, stirring frequently until the beans are heated through and have reached your desired consistency.
