Prepare the Salmon

    Grill the Salmon

    Preheat the grill to medium-high heat. Brush the salmon filet with olive oil and season with mesquite seasoning, salt, and black pepper. Place the salmon on the grill and cook for 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

Prepare the Vegetables

    Grill the Vegetables

    Slice the bell peppers, zucchini, and red onion. Toss the vegetables with a little olive oil, salt, and pepper. Grill the vegetables for about 5-7 minutes or until they are tender and have grill marks.

Make the Vinaigrette

    Combine Ingredients

    In a small bowl, whisk together the pomegranate juice, balsamic vinegar, honey, olive oil, salt, and black pepper until well combined.

Assemble the Salad

    In a large bowl, toss the spring mix with the grilled vegetables and half of the pomegranate vinaigrette. Place the tossed salad on a plate.

    Place the grilled salmon filet on top of the salad.

    Drizzle the remaining pomegranate vinaigrette over the salmon and salad. Top with crumbled Fresco cheese.
