For the Enchiladas

Prepare the Fajita

    Cook the Beef Strips

    In a large skillet, heat the olive oil over medium-high heat. Add the beef strips and cook until browned, about 5 minutes.

    Add Vegetables

    Add the sliced bell peppers and onions to the skillet. Sprinkle the fajita seasoning over the top and stir to combine. Cook for an additional 5-7 minutes, or until the vegetables are tender.

Assemble the Enchiladas

    Prepare the Tortillas

    Preheat your oven to 350°F (175°C). In a baking dish, spread a layer of enchilada sauce at the bottom.

    Layer the Ingredients

    Take a blue corn tortilla, place a few tablespoons of shredded chicken, black beans, and a sprinkle of cheese in the middle. Roll it up and place seam-side down in the baking dish. Repeat with the remaining tortillas.

    Add Sauce and Cheese

    Once the tortillas are arranged in the dish, pour the remaining enchilada sauce over the top. Sprinkle with the remaining cheese.

    Bake

    Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve

    Garnish and Serve

    Remove the enchiladas from the oven and let them cool slightly. Top with sour cream, chopped cilantro, diced onions, and sliced jalapeños if desired. Serve hot with the prepared fajitas on the side.
