Enchilada Assembly
Method
Preparing the Taco Filling
- 1
Cook the Beef
In a large skillet, over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- 2
- 3
Season the Filling
Stir in taco seasoning, tomato sauce, salt, and black pepper. Let it simmer for 5 minutes until heated through. Remove from heat.
Assembling the Enchiladas
- 4
Preheat the Oven
Preheat your oven to 375°F (190°C).
- 5
Fill the Tortillas
Take a corn tortilla and spoon about 2-3 tablespoons of the taco filling into the center. Sprinkle with cheese, then roll up the tortilla tightly and place seam-side down in a baking dish.
- 6
Repeat the Process
Continue filling and rolling the remaining tortillas until all the filling is used.
- 7
Add Enchilada Sauce
Pour the enchilada sauce evenly over the rolled tortillas in the baking dish. Sprinkle remaining cheese on top.
- 8
Bake
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
- 9
Serve
Remove from the oven, let cool for a few minutes, then serve hot topped with sour cream and chopped cilantro.
