Preparing the Taco Filling

    Cook the Beef

    In a large skillet, over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Add Onion and Garlic

    Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

    Season the Filling

    Stir in taco seasoning, tomato sauce, salt, and black pepper. Let it simmer for 5 minutes until heated through. Remove from heat.

Assembling the Enchiladas

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Fill the Tortillas

    Take a corn tortilla and spoon about 2-3 tablespoons of the taco filling into the center. Sprinkle with cheese, then roll up the tortilla tightly and place seam-side down in a baking dish.
