Preparation of Chicken

Marinate the Chicken
In a bowl, combine buttermilk, salt, black pepper, garlic powder, and paprika. Add the chicken thighs and marinate for at least 30 minutes.

Dredge the Chicken
In another bowl, mix flour, salt, black pepper, garlic powder, and paprika. Remove chicken from the buttermilk, allowing excess to drip off, then dredge in the flour mixture.

Fry the Chicken
Heat oil in a deep skillet over medium heat. Fry the chicken thighs in batches until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.
Buffalo Sauce

Prepare the Sauce
In a small saucepan, melt butter over low heat. Stir in hot sauce, garlic powder, and salt until combined. Remove from heat.
Coleslaw Preparation

Mix the Coleslaw
In a bowl, combine shredded cabbage, shredded carrots, black sesame seeds, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss until well combined.
Assembly

Build the Sandwich
On each toasted potato bun, place a piece of fried chicken, drizzle with buffalo sauce, add pickles, and top with black sesame coleslaw. Close the sandwich and serve immediately.
