Cocktail Preparation
1. Prepare the Passion Fruit Foam
In a blender, combine 1 cup of fresh passion fruit pulp, 1/4 cup of sugar, 1/4 cup of water, and 1 egg white. Blend until smooth, then strain through a fine mesh sieve to remove seeds. Chill in the refrigerator until ready to use.
2. Mix the Cocktail
In a cocktail shaker, combine light rum, dark rum, triple sec, fresh lime juice, orgeat syrup, and orange bitters. Fill the shaker with ice and shake vigorously for about 15 seconds.
3. Serve
Strain the mixture into a rocks glass filled with ice. Gently spoon the passion fruit foam over the top, allowing it to float. Garnish with a lime wheel or mint sprig if desired.
