Prepare the Black Sesame Coleslaw
In a large bowl, combine the shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, salt, black pepper, and black sesame seeds. Mix well and set aside in the refrigerator to chill.

Prepare the Rockfish
Set up a breading station with three shallow dishes. In the first dish, place the cornmeal. In the second dish, place the flour. In the third dish, beat the eggs.

Fry the Rockfish
In a large skillet, heat the oil over medium-high heat. Once hot, carefully add the breaded rockfish fillets and fry for about 3-4 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Cabana Filet
Toast the potato buns lightly. Place a fried rockfish fillet on each bun, top with a slice of American cheese, some pickles, and a generous serving of the black sesame coleslaw. Top with the other half of the bun.
