Prepare the Horseradish Mayo
In a small bowl, combine the horseradish mayo ingredients and mix well. Set aside.

Toast the Buns
Lightly toast the potato buns until golden brown on the cut sides.
Assembly

Assemble the Sandwiches
On the bottom half of each toasted bun, layer smoked shaved top round, a slice of American cheese, and a generous amount of pickled jalapeños. Spread horseradish mayo on the top half of the bun.
