Prepare broth
In a large soup pot, combine 8 cups vegetable broth and 1 cup water. Add 2 bay leaves and 1 tablespoon fresh thyme (or 1 tsp dried). Bring to a gentle simmer over medium heat while you prepare the vegetables.

When adding salt and pepper, start with 1 1/2 tsp salt and 1 tsp freshly ground black pepper. You will adjust seasoning near the end. Add 1/4 tsp red pepper flakes now if using for a touch of heat.

Add 3 minced garlic cloves and cook 30–45 seconds until fragrant, stirring constantly to avoid burning.

Stir in the zucchini (1 cup), frozen peas (1/2 cup), corn (1/2 cup) and diced tomatoes with their juices (1 cup). Simmer another 6–8 minutes until all vegetables are tender but not mushy.

Add the chopped leafy greens (2 cups) during the last 2 minutes of cooking so they wilt but remain bright. Remove and discard the bay leaves.

Taste the soup and adjust seasoning: add more salt or pepper if needed. Stir in 1 tablespoon fresh lemon juice and 1/4 cup chopped fresh parsley. If desired, sprinkle 1/4 cup grated Parmesan into individual bowls or directly into the pot for a richer finish (omit for vegan).

Ladle soup into bowls and serve hot. The soup keeps well refrigerated for 3–4 days and can be frozen for up to 2 months. Reheat gently on the stove, adding a splash of broth or water if it’s too thick.
