    In a large pot, combine 6 cups chicken stock and 1 cup water. Bring to a gentle simmer over medium heat.

    Add 1 tablespoon light soy sauce, 1 teaspoon salt, and 1/2 teaspoon white pepper to the simmering liquid and stir. Taste and adjust seasoning; remember the minced chicken will add flavor as it cooks.

    Prepare aromatics and chicken

    Peel and finely grate 1 tablespoon fresh ginger. Thinly slice 3 green onions, keeping white and green parts separate. Mince 1 garlic clove. In a medium bowl, combine 1 pound ground chicken with half the grated ginger (about 1/2 tbs), 1/4 tsp salt, and a pinch of white pepper; mix lightly to combine.

    Heat 1 tablespoon vegetable oil in a small skillet over medium heat. Add the minced garlic and the white parts of the sliced green onions. Sauté until fragrant, about 30–45 seconds; do not brown. Add this aromatic mixture to the simmering broth.

    With the broth at a gentle simmer, use a fork or spoon to break up the seasoned ground chicken and slowly drop it into the simmering broth in small clumps (or scrape it through a sieve to create fine strands). Stir gently to separate and cook the chicken evenly for 3–4 minutes, until no longer pink.

    Add 1 cup frozen corn kernels to the pot and continue to simmer for 2–3 minutes until corn is heated through and tender.

    Thicken and finish

    In a small bowl, whisk 2 teaspoons cornstarch with 3 tablespoons cold water until smooth to make a slurry. Stir the slurry once more then slowly pour it into the simmering soup while stirring gently. Allow the soup to simmer for 1–2 minutes until it slightly thickens.

    Lightly beat 1 large egg in a small bowl. With the soup at a gentle simmer, slowly drizzle the beaten egg into the pot in a thin stream while stirring the soup in a single direction with a fork or chopstick to create ribbons (egg drop). Stir once through to evenly distribute.

    Turn off the heat. Stir in remaining grated ginger (if any), 1 teaspoon sesame oil, and the green parts of the sliced green onions. Adjust seasoning with additional salt or white pepper to taste.
