Prepare Glass and Ice
Chill a highball or Collins glass in the freezer for 5–10 minutes or fill it with ice to chill and then discard the ice. Add 1 cup of fresh ice to the serving glass just before building the drink.

Juice Limes
Roll the 2 whole limes on the counter with palm pressure to soften them. Cut each lime in half and juice until you have approximately 1.5 fl oz (about 2 tablespoons + 1 teaspoon) of fresh lime juice. Strain the juice into a small measuring cup to remove seeds and excess pulp if desired.

Sweeten (Optional)
Taste the lime juice if desired. If you prefer a slightly sweeter drink, stir in 1/2 tablespoon simple syrup (or to taste) with the lime juice until combined.

Build the Drink
Pour the fresh lime juice (sweetened or not) over the ice in the chilled glass. Slowly pour 12 fl oz tonic water down the side of the glass to preserve carbonation and gently stir once or twice with a long spoon to combine. Avoid vigorous stirring to keep tonic fizzy.

Garnish and Serve
Float a lime wheel or place a lime wedge on the rim. Add a mint sprig for aroma if using—smack it gently between your palms first to release oils. Serve immediately with a straw or stirring stick.
