Bloom gelatin

Sprinkle the gelatin powder over 1 tablespoon cold water in a small bowl. Let sit 5 minutes to bloom. If using agar, follow package instructions (usually dissolve in hot liquid).

Combine coffee and powders

In a small saucepan, combine the cooled strong brewed coffee, instant espresso powder, granulated sugar, and unsweetened cocoa powder. Stir to combine.

Heat and dissolve gelatin

Warm the coffee mixture over low heat until steaming (do not boil), stirring until sugar, cocoa, and espresso dissolve, about 3–4 minutes. Remove from heat, add the bloomed gelatin and whisk until fully dissolved, about 1 minute.

Set the gel

Pour the coffee mixture into a shallow dish or into individual serving cups to form the base layer. Refrigerate until set, about 1–1.5 hours. The texture should be soft but sliceable (a coffee 'gel').

Prepare chocolate cream

While the coffee gel chills, combine the heavy cream, brown sugar, vanilla extract, and sea salt in a mixing bowl. Whip to soft peaks (or warm gently if you prefer a pourable sludge layer). Fold in the chopped bittersweet chocolate until it melts into streaks; this creates a thick, glossy chocolate cream.

Warm condensed milk

Warm the sweetened condensed milk gently in a small saucepan over very low heat for 2–3 minutes, stirring so it becomes pourable and slightly thinned. Remove from heat.

Assemble sludge mixture

Once the coffee gel has set, break it into rough chunks with a fork or spoon to create 'sludge' pieces. In a bowl, combine the coffee chunks with about half of the warmed condensed milk and half of the chocolate cream. Stir gently to coat the coffee chunks — you want an uneven, heavy-concentrated texture resembling thick wet sludge. Taste and add more condensed milk or chocolate cream to reach desired richness and sweetness.

Crisp/Garnish and Final Assembly

Build the Sludge Cup

Place a layer of crushed chocolate cookie crumbs (about 1–2 tablespoons) in the bottom of each serving cup or glass. Spoon in a generous portion of the coffee-chocolate sludge mixture, aiming for rustic, uneven mounds. Add another thin crumble layer and a drizzle (about 1 teaspoon) of espresso or coffee syrup if using. Top with a dollop of the remaining chocolate cream or whipped cream.

Finish and garnish

Sprinkle chocolate shavings over the top and a pinch of sea salt. For extra contrast, add a few more cookie crumbs around the edge. Chill the assembled cups for 10–15 minutes to settle, or serve immediately at cool temperature.

Serve

Serve chilled as a decadent, textured dessert. Provide a spoon to scoop through crumb layers and thick sludge. Keeps covered in the refrigerator for up to 48 hours, though the cookie crumbs soften over time.
